SICILIAN KALE SALAD WITH ORZO
— SERVES 4 —
This inspiration for this dish comes from one of my favorite ways to eat kale: lightly sautéed and topped with raisins, balsamic vinegar and toasted pine nuts. I know it sounds a little strange, but the combination of hearty kale with tart raisins and slightly sweet balsamic vinegar is heavenly. To make this more of a meal, I add in cooked orzo and top with a generous shaving of Parmesan cheese.
Tuscan kale, also called lacinato, dinosaur or black kale, is the best type of kale to use here. Its crinkled leaves are smaller and more tender than the leaves of curly kale.
